However, every area in the region has its own peculiarities, variations of traditional recipes that are passed on from family to family.

In the area of Gambassi Terme, where agriculture and breeding are primary activities, you can enjoy excellent cheeses and cold cuts. The vegetables, exclusively in season, accompany each dish as well as extra-virgin olive oil and Chianti DOCG wine. The latter is produced on the hills and in the surroundings of Gambassi in large vineyards which, on request, is possible to visit.

Main courses, if not vegetable garden, are often meat-based. Very used in typical Tuscan cooking is game (such as wild boars, hares, rabbits) that is hunt along the sides of the hills and in local groves.
